After the restaurant team came to my wine merchants for a nature wine-tasting, I felt their passion and joy for quality products and authentic taste. A couple of months later in January 2015, Industry Standard opened on Sonnenallee. The open kitchen greets you at the entryway, with many work surfaces and shelves holding disposable glasses of sour cucumbers and dill (the best I’ve ever had), small mushrooms (highly aromatic), red cabbage (tasty, with a bite), and everything else inspiring the chefs. Responsible for all of this is Ramses Mannek from Mexico, whose background includes his experience from Paris, as well as the Berlin Cordobar and learning the best cuisine in Norway from the Canadian Jean Philippe Quentin. Barkeeper Gordon is from Ireland and produces hand-crafted herb essence for his unusual drinks (“Mia Farrow”). The rest of the team is a motley group with the same goal: authentic taste from the best products. What’s on offer changes with the market situation, for example, Oyster Mexican (fiery shot, fresh oyster), Beef Tartar “Industry Style” (creamy and complex), and Lamb BBQ with Cauliflower (an exciting combination). With it comes well chosen artisan wines and an exciting location from a new Berlin based gastronomy generation. Go and try. (Text: Holger Schwarz)
