TIGELLERIA DI CAPRIO — BREAD ROLLS FROM BOLOGNA

Ever had a toastie from the supermarket? A “tigelle” is similar, but a more delicious, fresh, and authentic version. Italy is home to thousands of variations of sandwiches. “A friend of mine from Bologna showed me these” explains Richard Anders, the owner of café Tigelleria di Caprio. Since then he’s produced the flat bread rolls on his own. Made out of wholemeal flour, yeast, oil, salt, and water, the dough is baked with a special iron in round ramekins for 15 minutes. Afterwards, it is traditionally covered with salami, cheese or yam; though Richard is flexible with toppings, letting the customers decide for themselves. Upon request, he cuts avocados and other vegetables for the sandwich, salts it, and squeezes just a little bit of lemon on top. The cream cheese and quince jelly version also makes for a perfect breakfast and tastes just right with Italian coffee. The best time for a visit is at breakfast or lunch.
