While a lot of life is on hold at the moment, there are special occasions we still want to celebrate: anniversaries, birthdays and other memorable moments. This is where Mansfield Park comes in. Owner Gabrielle Coffey started baking after turning to veganism in 2009; her goal was to create the dairy-free sweets she couldn’t find anywhere else. In 2013 she moved to Berlin, baking at a vegan pizzeria and Neundrei before starting out on her own. Named after the Jane Austen novel of the same title, her bakery business creates cakes that are as elegant as Austen’s characters, from multi-layered Ombré cakes to semi-naked creations that look brushed with grainy, textured paint.
Gabrielle’s priority is sustainability, and this means being completely plant-based. She also uses seasonal fruits, fair trade chocolate and vanilla from Britain, and wraps her baked goods in organic cotton rather than plastic. In the online shopyou’ll find all the popular favorites, though if you want to let your imagination run wild you can order a custom-made cake, just like we did to mark Cee Cee’s 10th birthday! Gabrielle surprised us with a two-tiered cake comprising a pistachio and berry-flavored base with white chocolate mousse and thickened berry puree, topped with a hazelnut muscovado cake with caramel, roasted hazelnuts and vanilla pastry cream. A feast for the eyes as much as the stomach. Happy birthday to us!
