DR. MAURY — FINE WINES AND DELECTABLE SMALL PLATES

Dr. Maury is a casual wine bar opened in Summer 2018 by the same restaurateurs behind the French bistro Les Valseuses. Owner Olivier Lapeyre greets me with a warm smile and casual air, offering a funky red wine with pepper notes. They have a rotating wine list but often stray from the menu. “We open what we feel at the time.” He uncorks a second wine, a vivid Malbec fermented with pressurized grapes. The focus at Dr. Maury remains wine, but the small plates are more than satisfactory, showcasing the duo’s background in gastronomy. Their chipped gouda with sugar beet reduction and onions is a careful orchestration of flavors that balance perfectly with the Jurancon Noir or something a bit more tannic like Château Peyrat. The creamy artichoke spread is also a must-try when you visit. “In France,” Olivier recounts, “wine used to be part of your wages.” That same knowledgeable but unfussy approach extends to their occasional events. They’ve held a blind taste test of natural wines as well as an exhibition of vintage skateboard stickers, so stay on the lookout for what’s next. Drop by for a glass of whatever’s pouring that night.
