LOTI PANTÓN — PERFECTLY-FORMED MACARONS IN A MYRIAD OF FLAVORS AND COLORS

LOTI PANTÓN — PERFECTLY-FORMED MACARONS IN A MYRIAD OF FLAVORS AND COLORS

If Mitte has a macaron expert, it’s Loti Pantón. This Israeli-born baker – who runs a dessert shop of the same name on Linienstraße – makes some of the most beautiful and mouth-watering mini cakes we’ve seen. If you need a recap: macarons are a sweet treat made from two meringue-based biscuits that surround a flavored ganache, cream or jam filling. Loti began offering them at his first store in Zehlendorf before relocating to this latest shop which offers close-up views of the baking team at work. First popularized in France during the renaissance, macarons now come in every imaginable flavor. Our team had lots of fun trying Loti’s different flavors and were particularly impressed by the “St.Moritz” savory macaron which combines raclette flambée (cheese melted with a blowtorch), salty pecans and bourbon whiskey. The Christmas collection, meanwhile, includes sweeter varieties such as Lebkuchen and Marzipan.

If you are vegan or coeliac, don’t stop reading: the biscuits, which are traditionally made using egg white, are offered in an equally divine plant-based form, a feat which required six months of experimentation. Our vegan pick: the “Birgi”, blends mocha and figs with a decadent hazelnut praline filling. All the creations are completely gluten-free due to the almond flour base. The only drawback with Loti’s macarons is that they look too good to eat – almost!
