PAUL MÖHRING — A THIRD GENERATION URBAN ICE CREAMERY

It turns out the new ice cream kid on the block has an old soul. Opened in May 2017 by David Heinz, Paul Möhring’s concept is a tribute to Heinz’s grandfather-in-law, Paul (1906-1990), who’d create soft-serve ice cream on his Brandenburg farm whenever it snowed. He’d go outside to fill an enamel bowl with the snow before adding milk, egg yolk, sugar, vanilla and a pinch of salt, churning it for the family to enjoy. Today, the custom continues whatever the weather under the motto “tradition and madness”. Pick a base of vanilla, chocolate or seasonal fruit, then go wild with toppings ranging from Sicilian olive oil and fleur de sel to crushed wasabi peas and aromatic Szechuan pepper. The vegan “Hipper Sipper” sorbet (Monkey 47 gin, tonic and cucumber with Chamoy) is the creamiest of its kind we’ve yet tasted in this city. With its friendly service and innovative spirit, this small business with a big heart is set to take your frozen delight indulgence to the next level this summer.
