COLLECTED, FERMENTED, EXPERIMENTED: AERDE — THE MOST DELICIOUS IN TOWN

On Aerde’s website, you don’t find much information about the restaurant at first. A simple sentence reads: “aerde is a twenty-seat research restaurant with a special focus on the flavors of our local forests and fields.” A second link lists, in addition to the restaurant in Berlin, a location in Wendisch Rietz, Brandenburg, where the team at Aerde ferments gathers and experiments with what the region has to offer directly. I found this somewhat surprising because are we, as visitors, not primarily concerned with the guest experience, the final dish, and the ambiance? The team would keep us in the dark until the finely composed and flavorful plate was served before us. It requires research, test runs, an extensive repertoire of knowledge about the processing of products, and imagination. This is the repertoire that young chef Igor Kazakov, who previously served as sous chef at Cordo, brings to the table. He focuses on the fermentation of regional products. And so the versatility of this technique was the common thread of the lovingly prepared courses.

The homemade fish garum gives the regional trout with puffed (and also local) quinoa, served with smoked paprika oil, its well-deserved complexity. In short, garum is an ancient Roman seasoning sauce produced by the decomposition of proteins. We all know it from classics like fish sauce or soy sauce. Our personal highlight: roasted oyster mushroom on pickled Wunderlauch buds, a plant that only grows here in Berlin, on a frothy “Heu Hollandaise” that was as buttery as the name suggests. The Uckermark venison tartare, with pickled currants, beef garum, and garlic bread from Domberger Brotwerk Bakery, left us speechless. But it was not only the finely harmonizing ingredients: the wine accompaniment was also perfectly matched, and Hillevi Hövelmann introduced us to new facets of taste with exciting natural wines. A simple, reddish ocher is the dominant color tone of the entire dining room and offers both the concept and the name of the restaurant the proper finishing touch. The menu reads simple and understated, and the team is casual and warm. As host Justus Will clarified that evening, Aerde is all about the product and the technique. Everything else is a bonus.

Reading can provide a much-needed break from digital doom scrolling. The only question is: what to read? Literaturensohn offers help! In September, Coco Meurer brought her eponymous Instagram account to Brunnenstaße. Only books she has herself read make it onto the shelf here. Curation. Curation. Curation. Since 2020, the book enthusiast has been recommending works by young, fierce, strong and female voices on her channel. She has developed three categories for her recommendations – from light holiday reads to philosophical hunks. Coco has now moved to Brunnenstrasse. And because she loves not just books, but creative work in all its forms, the shop regularly hosts events with creative partners. A workshop with crochet artist Mimo from Amigurumimo, whose cute figurines are also sold in the store, was fully booked in just a few minutes. In January, the Cologne-based Ben Tausend Tattoos will make a guest appearance. And if you’re planning to launch a novel, with her creative office, Coco also develops outstanding digital campaigns, covers and artworks. Literaturensohn is really worth a visit, even if your pile of books is already stacked high…

AN URGENT LOOK AT THE IMAGES OF THE WORLD — THE POSTER LABEL “FROM” LAUNCHES ITS FIRST EDITION AT HOPSCOTCH READING ROOM

If you look at the large-format prints by photographer Johanna-Maria Fritz, to be installed in the Hopscotch Reading Room in Schöneberg on 23.11.23, you’ll see beige, sand, and dust. You’ll feel texture, warmth, and shadow. You’ll feel wonder, awe, curiosity. Perhaps you’ll ponder and ask yourself: What is a story? The things we tell or the things we leave out? What is memory? Narration? Document? Testimony? What is true? What is real? What is beautiful? And what does all this mean in a time when images are racing, and the news is pushing when everything is available every second and yet forgotten as soon as we click on it? Marie-Kristin Thiele, creative director and founder of the poster label From, must have had this and more on her mind when she first came across the work of the Ostkreuz graduate, who lives between Berlin and the Middle East, and invited her to open her newly founded poster project, which will now launch high-quality art poster editions at regular intervals. Thiele finds the motifs for this in existing documentary archives, always looking for outtakes “that are too subtle, too blatant or simply too beautiful” to have made it into a previous publication.

Aesthetics and authenticity manifested in curated prints and images that tell stories. The motifs by Johanna-Maria Fritz, which will be launched next Thursday, tell this story: The sculptor Jumua al-Hamu from Rakka, Syria, buried his art in the ground during the rule of the Islamic State: under Sharia law, any art was forbidden. Now that the jihadists have been driven out and despite corruption, mistrust, and the risk of renewed fighting, his art is returning to the light of day. And perhaps now in the living rooms of Berliners or under the Christmas trees of their loved ones. Incidentally, part of the proceeds will go directly to al-Hamu. In the spirit of the project. Or as Thiele says: “From connects us with the world. With real pictures and true stories.”

A KEY ICON OF CONTEMPORARY AFRICAN MUSIC — ANGÉLIQUE KIDJO PERFORMS AT HKW

“Best We Can” is the name of the latest single release by Beninese singer and five-time Grammy winner Angélique Kidjo, who collaborated with the two musicians Nomcebo Zikode and James BKS. A comforting title and an aspirational goal, Kidjo’s driving beats and warm sounds also manage to dispel the omnipresent clouds. On Friday (24.11.2023), you can hear it for yourself live: HKW invites you to indulge in the vast spectrum of rhythms of African music at Tiergarten. Congolese rumba, Nigerian highlife, West African funk, Cameroonian makossa and so on… Combining influences from Caribbean reggae, North American rock, Brazilian samba, and European disco – there is hardly any other musician who so effortlessly draws on these genres, blending the sounds with her unique energy to create something entirely her own without shying away from vintage quotes or Afrofuturist tendencies. With a career spanning over forty years, Kidjo is rightly regarded as one of the most important West African artists and a key figure in contemporary African music. We are lucky to be able to experience her in Berlin – and just the right thing on these short days and at a time when we should all be reminding ourselves regularly: Let’s do the “best we can.”

EVERYTHING CRUMBLES INTO DUST: THE BURSTER GALLERY PRESENTS MASTER STUDENTS AT THE UDK BERLIN ART AWARD

How does art get from the academy to the gallery? Who builds the bridge between the university and the art world? One place where you can always find young artists is the Galerie Burster. The team has been associated with the Berlin University of the Arts for many years. This year, the gallery presents master students awarded the UdK Berlin Art Award – a prize awarded to outstanding students from the Fine Arts and Design Departments. Following the opening exhibition by performance artist Finja Sander, Mateo Contreras Gallego will be using photography and moving images from this week onwards to tell stories of farewells and absence. He repeatedly refers to his Colombian origins and the experiences of his family.

Shinoh Nam, whose works will be on display from 22.11.2023, also deals with change and dissolution: he breaks buildings down into fragments, and architecture appears as mere artifacts – as fragments of memories of something that once was. From 29.11., Seungjun Lee will also be questioning how we remember. In his search for a language of memory, he chooses materials that will forever be linked to history: Dust and sand. He forms miniature houses from refined grains, which are already in the process of disintegrating and slowly crumbling at the beginning of the exhibition. Lee creates fragile spaces from the remains that are wiped away and disposed of – and in doing so, finds poetic images for the passing of time. This show proves just how much awaits these four newcomers in the future.
