Anyone who has ever eaten at Frea knows the vegan restaurant as one of the pioneers of the zero waste movement. Now, for the first time, the inside story of how the Mitte eatery became an internationally-recognized success has been told in the book Full Taste Zero Waste. The 280-page hardback reveals it all, from how the restaurant got its name to tips and tricks for how you can integrate sustainable practices into your own life. Your guides are Frea founders Jasmin and David Johannes Suchy, who share their experiences from the restaurant business and how they managed to revolutionize gastronomy while staying true to their values. The pair’s zero-waste manifesto also includes recipes to try at home: from pickled yellow beet and cauliflower to complex creations such as nectarine sorbet with apricot sauce and an almond mole with courgette, aubergine, herbs and mushrooms. Photographs in the book come courtesy of photography studio Juni, who capture the restaurant team, the dishes, plus visual insights into organic farming. If you are looking for inspiration for your journey to sustainability – or simply some food-based escapism during lockdown – these pages are full of it!

SUSTAINABLE WASHING AND WIPING — MIX-AT-HOME SPRAY CLEANERS FROM MOANAH

It’s the time of year for deep cleaning, and for those of us seeking environmentally-friendly detergents there are endless sprays and soaps all promising to be “planet-friendly”. Berlin-based Moanah has a range of cleaners which they believe really do offer green cleaning. The difference? Rather than liquid cleaners, the startup offers powder-based detergents which you mix up at home with simple tap water to make into a spray. When the bottle is empty, you just refill it with some fresh solution. As well as producing less packaging, doing it this way means less CO2 spent transporting bulky liquid cleaners (which are typically 90+ percent water). The powders come in three varieties – for windows, bathrooms, and general cleaning – with each 5g packet sufficing for a 500ml spray bottle of gentle detergent that can still tackle the toughest of jobs.

For co-founder and Mannheim native Salar Armakan, avoiding excessively harsh chemicals was crucial: his mother worked as a cleaner after immigrating to Germany from Iran and found commercial cleaning products harmful for her lungs and skin. Driven by this experience, Armakan teamed up with business partners Felix Kleinhenz and Katharina Zurmühlen to launch the eco cleaner range in 2019. The team’s starter set includes all three powders, a cleaning cloth and elegant glass spray bottles – though you can just use any bottle you have in your cupboard. With just a mix and a squirt you can make your spring clean a bit more green.

Growing up surrounded by allotments with a mother who loved to garden, I learnt that sowing seeds can be a form of therapy. Karla, founder of Berlin-based Dida Seeds, was also inspired by a loved one: “Dida” is the Croatian word for grandpa – and it was Karla’s Croatian grandfather who gave her her green thumb. Launched in August 2020, her organic flower seeds and bulbs are just the thing you need to get growing, and come complete with planting tips, flowering times and suggested uses (from making teas to helping pollinating insects). The vast seed selection is certainly colorful: the Love-in-a-Mist mix for instance comes with white, blue and green flowers which look beautiful and dry amazingly for lasting blooms, while the Cosmea (Rosetta) produces rich pink flowers and grows both inside and out, reaching a height of up to 180cm.

As for bulbs, there are the Replete daffodils – also known as the double daffodil – which produce flowers with a delicate duotone appearance (tip: plant in autumn so you can enjoy them next spring). The seeds and bulbs are thoughtfully packaged, with hand-drawn prints of the plant made with water-based ink on recyclable paper. As we enter the growing season, it’s time to get some plant-based therapy: connecting with the earth and sowing your own seeds!

NATURAL SPIRITS AND SYRUPS FOR CREATIVE COCKTAILS — MONDHÜGEL KREUZBERG

Intense taste without any artificial flavors? At Mondhügel Kreuzberg the motto is “naked drinking”: the makers of spirits and syrups keep things 100 percent natural by using only gently extracted ingredients in their Berlin-made drinks. Behind the brand are Philipp Schmitz, a sommelier with a fine-dining background, and former marketeer Benito Opitz. Since April 2020, the pair have been tinkering in their “innovation lab” at Markthalle Neun to achieve maximum taste from small quantities. The result is a 500ml syrup bottle that is good for up to 25 drinks – perfect for creative mixing, both with and without alcohol. Booze wise there’s the likes of the Kreuzberg Gin with wild juniper, cubeb pepper and lemon which offers the perfect accompaniment to the Kreuzberg Tonic, made from yellow chinese bark, fresh lime juice and lemongrass. The two combine to make drinks that are sustainable, organic, fair trade – and delicious. You can order the whole range here
