COLLECTED, FERMENTED, EXPERIMENTED: AERDE — THE MOST DELICIOUS IN TOWN

On Aerde’s website, you don’t find much information about the restaurant at first. A simple sentence reads: “aerde is a twenty-seat research restaurant with a special focus on the flavors of our local forests and fields.” A second link lists, in addition to the restaurant in Berlin, a location in Wendisch Rietz, Brandenburg, where the team at Aerde ferments gathers and experiments with what the region has to offer directly. I found this somewhat surprising because are we, as visitors, not primarily concerned with the guest experience, the final dish, and the ambiance? The team would keep us in the dark until the finely composed and flavorful plate was served before us. It requires research, test runs, an extensive repertoire of knowledge about the processing of products, and imagination. This is the repertoire that young chef Igor Kazakov, who previously served as sous chef at Cordo, brings to the table. He focuses on the fermentation of regional products. And so the versatility of this technique was the common thread of the lovingly prepared courses.

The homemade fish garum gives the regional trout with puffed (and also local) quinoa, served with smoked paprika oil, its well-deserved complexity. In short, garum is an ancient Roman seasoning sauce produced by the decomposition of proteins. We all know it from classics like fish sauce or soy sauce. Our personal highlight: roasted oyster mushroom on pickled Wunderlauch buds, a plant that only grows here in Berlin, on a frothy “Heu Hollandaise” that was as buttery as the name suggests. The Uckermark venison tartare, with pickled currants, beef garum, and garlic bread from Domberger Brotwerk Bakery, left us speechless. But it was not only the finely harmonizing ingredients: the wine accompaniment was also perfectly matched, and Hillevi Hövelmann introduced us to new facets of taste with exciting natural wines. A simple, reddish ocher is the dominant color tone of the entire dining room and offers both the concept and the name of the restaurant the proper finishing touch. The menu reads simple and understated, and the team is casual and warm. As host Justus Will clarified that evening, Aerde is all about the product and the technique. Everything else is a bonus.

SANDWICHES FROM SEOUL: THE KOREAN LOCAL “PERHAPS TODAY” AS GUEST AT UNKOMPRESS

One of my favorite places in Seoul is the restaurant “Perhaps Today” in Hannam. Slightly off the main street, the lovely owner, Heejin, serves natural wine, sandwiches, ice cream, and snacks there. Heejin is a born hostess whom everyone in the neighborhood knows: When she cooks in the small kitchen together with her staff, you feel right at home. But don’t worry: You don’t have to book a plane ticket to South Korea to try her creations. A visit to Uncompress in Kreuzberg next Saturday is enough. This is where Heejin will be guesting for a day on 11.11. with her pop-up project, “All Good Things.” With her, she has the bestsellers from Seoul: three focaccia sandwiches – one with salmon, one with ham, and one with pickled carrot. Her vegan tomato ragu – my favorite – is served as a dip with focaccia chips. If you want to make sure to try one of her delicious breads, it’s best to pre-order via her Instagram. And if you’re as big a fan as I am after the meal, you might as well get your hands on her Maybe-Today merchandise – to keep a piece of Seoul around in Kreuzberg for a bit longer. By the way, Heejin is moving on after Berlin: On the 25. and 27.11.2023, she will be cooking at La Station in Lausanne. And who knows… maybe she will come back to Berlin for a second round!

What happens when two DJs and a chef meet in Berlin? Well, as of the beginning of September 2023, you can find out for yourself right on the Spree at Anima. Anima is a new listening bar and one in which everything is just right: the music, the drinks and the bar menu all perfectly aligned. Each of these things in itself would make for a perfect evening, but it all adds up to make the Anima so exceptional. Add to that the panoramic view over the Spree and the pastel interior design that we are used to (and love) from Locke Hotels. Because, yes, The Anima awaits you right at the entrance of the new Locke in Berlin: Thibault and Robin, the owners of the listening bar, submitted a concept for the vacant space, and were able to snag the place for themselves among much competition. Café by day, listening bar by night with a sophisticated menu. You can visit both without being a guest of the house – quite the opposite, in fact: they’re happy to welcome friends, familiar faces and locals. But back where it all began: Thibault and Robin have been pursuing their DJ careers for 12 years, and although they’ve played for different collectives, the two have always felt like a well-oiled team. Robin moved to London quite early, before moving to Berlin nine years ago. Thibault moved to London a little later, after studying in Paris for several years. But it was because of Robin that he decided to move to Berlin seven years ago. I don’t remember exactly where the two of them met, but it feels like they’ve known each other for ages.

Besides music, the two share a love of food and evenings together in listening bars. What is still rather rare here has been a popular alternative to the usual pubs in London for years. It was clear to both of them that they wanted to open their own bar at some point, where snacks would not only play a supporting role, but would be a fixed and important part of the evening. And for this purpose, the two brought Andrea Iannicella on board – or rather into the kitchen. Andrea has worked in renowned restaurants such as Dóttir and Kink before Anima. On the handwritten menu (which I admittedly needed to swipe simply because it’s so beautiful) you’ll find a compilation of various bar snacks with a mix of Mediterranean influences and those from all sorts of places the three have traveled. Among them, for example, the Pork Slider, which is also available with mushrooms in a vegetarian version, mussels in tomato sauce, beef tartare or classics like marinated olives and bread with butter. In addition one of the terrific cocktails, like the Paloma, served in a glass dipped in chili salt, as a crowning finale a panna cotta or profiteroles. And if you’re wondering what great music is playing with your drink, just take a look at the bar: right next to the record player, the vinyl record covers being played are presented on a designated shelf – so you always know what’s playing. Good food, a fancy cocktail, music in the background, leaning back in comfortable armchairs with a view of the Spree – Anima is the perfect place to unwind.

If you’ve already shifted into fall mode and just want to lie under the covers all day, then it’s the season for warm soups again. And there’s currently no better place for that than Maiyarap on Oranienstraße. Since the end of July 2023, Don, who you may already know from Tossakan, has been serving Thai noodle soups here. At Maiyarap, things are a little different, but there’s  one thing both places have in common: Don’s curiosity and willingness to experiment in the kitchen. How does it all taste? The best way to find out for yourself is to try one of his six “Gieuw Tiew” noodle soups. Whether with tofu, chicken leg or beef rib, each soup is served with homemade broth, fresh Thai herbs and rice ribbon noodles and delivers on texture, taste – and spiciness! For the latter, you can decide for yourself what you’re comfortable with – from not spicy to Thai spicy, it’s all there. At Don’s, soups also lend inspiration to creative beverages. For example, the “Tom Kha Sour” cocktail, based on Tom Kha soup (obviously) – a refreshing cocktail with rum, coconut milk, lemongrass, chili and coriander.

For delicious non-alcoholic options, there’s a selection of “home mades”: for example, the Cha Manao, a black tea from Thailand with sugar and lime, or the Nam Manao, a lemonade made with soda, lime and mint. And even those who aren’t in the mood for soup will get their money’s worth here with the small dishes: Steamed and deep-fried dumplings, corn patties and crispy pork belly (the absolute No.1 – next to Don and the noodle soups). One thing Don and I agree on is that the best dishes are often created late in the evening in the kitchen, when there’s not much left in the fridge, but our appetite is bigger than ever. Improvising has taught him to make a lot out of a little. We’re not talking about fine dining here, but food that reminds you of good home cooking. And so, in his noodle bar, come the most delicious soups, which make the cold days not only bearable, but one more reason to go out.

Are tapas your thing, no matter what time of day it is, morning or late evening? Then Fourty Years Kitchen in the middle of Gräfekiez might be just your new spot to put on your “To Try” list. The brunch and dinner spot is now the second location to join the Fourty Years Café, which has already made a name for itself in Kreuzberg. Alongside the friendly staff, owners Cemal and Merve personally welcome you with open arms. With the diverse options, you can choose here between cold and warm tapas, which are lovingly prepared in hot small pans and various bowls. So you can make your own favorites from a selection of vegetarian, vegan and the “I eat everything” dishes. We feasted our way through cilbir, turkish poached eggs with yogurt, shakshuka and Kibbeh – each of the tapas perfectly seasoned and prepared. In addition to the brunch highlights, there are several dinner highlights towards the evening that you should definitely try. From Mücver (Zucchini Pancakes) to Eggplant Rolls, Roasted Cauliflower, to “40ies Dürüm” and Iskender Köfte – there is something for everyone.

The homemade lemonades and non-alcoholic cocktails are another highlight on the menu, for example the Blackcurrant Rosemary Lemonade and the Espresso Martini (0.0%). When it comes to the dessert menu, it’s best to let yourself be surprised: New desserts await you every week – so you can virtually taste your way through the dessert menu every week. Our weekly menu included a delicious Muhallebi (Turkish milk pudding) with rhubarb and strawberry cream and caramelized walnuts.
