EINSUNTERNULL — THROUGH THE LOCAL REGION IN 10 COURSES

Committing to locally sourced cuisine in the top-tier restaurant scene is becoming more and more popular in Berlin. At the end of 2015, the hidden restaurant Einsunternull in Mitte joined this trend. Arriving for dinner, it appears from the outside as though you’ve got the wrong address, but looks can be deceiving; the more causal upper floor is open only for lunch, whilst dinner takes place in the basement. If the word basement is off-putting, don’t worry – the property was renovated with a huge amount of care and attention, with the subterranean floor dug out to create a high ceiling and an adjoining garden atrium. The lower dining area has a calm and peaceful atmosphere, which intensifies as you descend in the elevator and take a seat. Every ingredient listed on the menu has been scrutinised, tested, and locally sourced – it took them half a year to find the hazelnuts, and the asparagus is pickled and preserved like Sauerkraut, leaving it as soft and tender as butter. You can taste the attention to detail, and every dish is a reference to the complexity of simplicity. Ivo Ebert, who runs the place, is also a sommelier, so don’t hesitate to accept the suggested paired wine list – you won’t regret it. (Text & photo: (bottom) Sven Hausherr)

They still exist, those tiny secret spots in Prenzlauer Berg, and you can discover one of them just by crossing Wichterstrasse. Arriving there, you will find the unique culinary pleasure of Asian dumpling art – probably the best of its kind in Berlin. The big windows of Yumcha Manufaktur look like a contemporary photograph, as the light spills out to welcome you with a warm glow during the longer and darker days of the winter season. The former butchers contains a mini restaurant, and focuses on the production of modest yet perfectly made dumplings and dim sums. Carefully rolled, stuffed and folded, the manufacturers serve high quality dishes that meet the standards of sister restaurants Yumcha Heroes and Long March Canteen. Sitting inside, you are surrounded by old signs from the factory’s former butchery days, leaving the origins of this place clear. Golden tiles on the sideboard tables and gently gleaming lightbulbs form a warm contrast to the red kitchen counter standing in the heart of the room, behind which exquisite stuffings are being freshly prepared. Dipping inside the hot steamed dumplings, you will be delighted by their smooth and flavorful taste – which makes all the difference. Divine. (Text: Sandra Birk)

Attention, all you lucky people: despite the name, Beuster Bar is not only a destination for lovers of immaculately tended drinks. Indeed, during my pilgrimage there, I discovered a true dedication to food and flavor, and realized that calling Beuster a “bar” is the biggest understatement of the year. Beuster hosts a perfect bistro kitchen, that exudes French noblesse combined with an air of nonchalance. Would you care for a glass of mineral Riesling, or for some perfectly fried octopus? Perhaps a steak tartar, lightly seared, with crispy skinny fries and a glass of Sancerre as a bona fide appetizer? It’s hard to believe that you’re not sat in the heart of Paris, and their dedication to perfect gastronomy is not limited to the food. The dining room is cozy, the menu small and refined, and the service swift and friendly. In only six months Richard, Stefan and Ludwig have turned an old physiotherapy office into their dream. With squeals of pure glee over the fantastic deconstructed cheesecake, I then followed an espresso martini straight to the bar. At the very least, an evening here is a special taste of happiness. Hidden away behind Concierge Coffee since the beginning of this year, Zola is one of the most recent establishments to serve up authentic pizza to the people of Berlin. The philosophy here? Simplicity. From the minimal, yet surprisingly friendly interior, to the unadorned menu and quality ingredients, Zola has got it right. We took Head Chef Lukas’ recommendation and ordered the day’s special – a delicious combination of smoked buffalo mozzarella, rocket and Coppa Prosciutto, cooked in minutes thanks to the scorching-hot, wood-burning oven (Lukas’ pride and joy). It’s not just the toppings that have been selected with care either; the dough is given just as much attention. Proved for two days, to allow the home-cultured yeast to develop, the base is full of flavour and as true to Napoli as anything you’ll find here in the city. Drop by for lunch like we did, or make use of the new late opening hours and fill one of the big wooden tables with a group of friends. TA’CABRÓN TAQUERÍA: MEXICAN SUMMER ALL YEAR ROUND

Since travelling to Mexico, I’ve really come to appreciate having Ta’Cabrón Taquería close by – indeed, it has become my favorite Latin American spot. Located in Wrangelkiez, they serve dishes from many different parts of Mexico. Ta’Cabrón’s chef, Joaquin Robredo, prepares everything fresh on a daily basis – salsas, dips and hot pots. The brightly painted walls, tables and plates add to the vibrant atmosphere; Ta’Cabrón is bursting with life in summer, and a welcome spot of colour during the grey winter months. Besides the soft tacos, I recommend their fried version, Tacos Dorados, or Tostadas with salad beans and cheese. You could also opt for the Enchiladas Verdes, filled tacos with lots (and lots) of salsa. The drinks sound as exotic as their ingredients, with Horchata, delicious rice milk with cinnamon, hibiscus iced tea, and Michelada, a Mexican-style beer cocktail with lime, chili and salt. And, of course, you will find a wide selection of Tequila and Mezcal, the agave schnapps from Oaxaca. Just hop on the U1, and get off in Mexico. (Text: Julia Michaelsen / Photo: Tim Kraehnke)
